When we were investigating why Americans valued meat so much, we found widespread confusion among consumers about which foods are healthy and sustainable. As part of the project, we asked consumers to sort different foods in any way they thought they should be grouped. Participants ended up dividing foods into groups such as fruits, vegetables, and dairy. However, most consumers didn't know how to sort plant-based "milks" and meat alternatives. Interestingly, they didn't consider them as part of any typical food group. In addition, most people still don't understand (or trust) lab-grown or cultured meats. The reaction to lab-grown meats will likely be similar to the often negative reactions to and suspicions of genetically modified foods when they first came on the market. These gaps in literacy of emerging technologies hinder the successful implementation of products that could have environmental and health benefits.::미국인들이 육류를 왜 그렇게 중요하게 여기는지를 조사하던 중, 우리는 소비자들 사이에서 어떤 식품이 건강하고 지속 가능한지에 관한 광범위한 혼란을 발견했다. 프로젝트의 일환으로 우리는 소비자들에게 다양한 식품을 그것들이 그룹이 지어져야 한다고 생각하는 어떤 방식으로라도 분류해 달라고 요청했다. 참가자들은 결국 식품을 과일, 채소, 유제품과 같은 그룹으로 나누게 되었다. 그러나 대부분의 소비자는 식물성 '우유'와 육류 대체 식품을 분류하는 방법을 몰랐다. 흥미롭게도 그들은 그것들을 어느 일반적인 식품군의 일부로 간주하지 않았다. 또한 대부분의 사람은 여전히 실험실에서 기르거나 배양한 고기를 이해하지(혹은 신뢰하지) 못한다. 실험실에서 기른 육류에 대한 반응은 유전자 변형 식품이 처음 시장에 나왔을 때 그에 대한 흔한 부정적인 반응 및 의심과 아마 비슷할 것이다. 이러한 새로 나타나는 기술에 대한 지식의 격차는 환경적 이점과 건강상 이점을 가질 수 있는 제품의 성공적인 도입을 방해한다.
